Who doesn’t love mac and cheese?
Calorie/cholesterol wise it’s not the best choice but we do have to enjoy our existence and thus we must have comfort foods…right? So here’s my recipe for Mom’s (me) Mac and cheese since my boys insist on a little junk now and then :) . A quick food, easy recipe and definitely a favorite. Keep in mind I’m very liberal in the ingredient department…It’s a good thing.
Ingredients -
10 handfuls macaroni (enough for 3 adults plus some leftovers which we love)
White sauce -1/2 cup butter
3 cups milk/or alternative
2 tbsp flour
pinch of salt and a dash or two of pepper
1 tsp of garlic
1 tbsp lemon pepper
2 tsp paprika
2 tbsp chopped parsley
3-4 cups cubed cheese of your choice. (I cut them bigger, I like chunks)
* 1 can of Campbell’s Fiesta Cheese or Cheddar Cheese Soup (See bottom of of recipe)
Directions -
10 handfuls (yes handfuls, use your hand to measure, it’s quicker) of macaroni cooked until chewy but not soft because they will be cooking in the oven again. Place cooked macaroni in large casserole dish. Set aside and make your white sauce.
White sauce -
1/2 cup, (1 cube) of butter melted in a medium sauce pan on low, don’t scorch it. Add about 2 tbsp of flour (wheat or white) and wisk until well mixed. Give it about 2 minutes wisking frequently and add 3 cups of milk or alternative product ( plain no sugar added soy milk/almond milk) cook on medium stirring often until thickens. Remove from heat. Stir in 2 tbsp of lemon juice (fresh or bottled), 1 tbsp of lemon pepper, 2 tsp of garlic (if desired). If you are using a sharper cheese you really don’t need salt so don’t add it.
Pour mixture over macaroni and stir lightly. Add 3-4 cups of cubed cheese of your choice (I use medium cheddar or sharp). Sprinkle with fresh parsley and paprika.
Cook in a pre-heated 400 degree oven for about 45 minutes (til well bubbly). Do this uncovered if you like the crispy top, cover if you like it softer. Cool for 15 minutes and dive in!
For variation add 1 cup chopped veggie of your choice. Or add 1 cup of chopped meat of your choice…possibilities are endless. If adding more items increase sauce by about another 1/2. What you don’t use you can always freeze for later which is really nice for a quick sauce. :) .
* If you find you need more sauce once you’ve added everything to the casserole dish you can add a can of Campbell’s cheese soup. My favorite is the fiesta nacho cheese. It makes it creamier and spicy.

Shelly's Kale, Orzo and Veggie Salad
Been eating a lot of salads! Pinterest has me entranced but this is one of my own combinations. Give it a whirl, you'll love it.
Shelly's Kale, Orzo and Veggie Salad
Chopped Kale (chopped small)
Chopped Romaine
Black olives cut in half
Chopped tomatoes
Chopped beets Red Kidney bean 1 1/2 cups orzo pasta uncooked
Olive oil
Use whatever looks like enough for you :)
Cook orzo as instructed on package
add all ingredients and toss! It's quite flavorful but you can add lemon juice or a little dressing.
